Fall Off the Bone Crock Pot Lemon Pepper Chicken
Depending on the size of your chicken, you will need a 4 or 6 quart crock pot.
1 Whole Chicken
5 Large Potatoes or a bag of gourmet baby potatoes (I find with the baby potatoes you can just chuck them in for quicker prep time)
2 cups/handfuls of baby carrots (or you can slice up carrots fresh from the garden/farmer’s market)
Gluten Free Lemon Pepper
1 Cup of Water
Because I like to throw these together quickly, I tend to use pre-cut or veggies that are just the right size. By using the little bags of gourmet potatoes (yellow or red) and baby carrots, your veggies are just the right size that you can avoid having to cut them (though you can cut the gourmet potatoes in half if you want).
First, put the chicken into the crock pot so you can make sure it fits well. Next, add your veggies (cut up your onions), making sure that they are tucked around and under the chicken’s legs. Add your cup of water before sprinkling the lemon pepper over the chicken and veggies. If you have other veggies you’d like to add, or prefer to use over the ones I’ve suggested, you can add and subtract.
I tend to like to prepare everything the night before hand, that way, when I have children in tow, all I have to do is pop that baby out of the fridge and place it in the crock pot chasis (or whatever the electrical part is called). Depending on how long you are going to be out, you can either put it on low for 8 to 10 hours or high for 4 to 6 hours.
Note: You can use the leftovers to make a chicken salad with for either crackers or sandwiches!
