Gluten Free & Clean Eating Recipe – Three Ingredient PB Cookies

Hershey Kisses and Hugs for an Optional Topping

Easiest Peanut Butter Blossoms Ever!

-preparation time: 5 minutes

1 Cup Creamy Peanut Butter

1 Cup White or Brown Sugar (Personally, I think brown sugar makes better cookies. The picture above is made with white sugar)

1 Egg

1 tablespoon of white sugar

Optional Topping:

Candy Topping (optional)

Preheat oven to 375 degrees. Mix peanut butter and sugar together in a large bowl until well blended. Then add the egg. Mix together until well blended. Add vanilla if using. Put white sugar on a plate. Roll into small balls then roll in the white sugar to completely cover the cookie ball. Place each ball on cookie sheet and use a fork to make hash marks on the top, smooshing the cookie down just a bit. Bake in oven for 10 minutes or until brown on bottoms. Place Hershey kisses, hugs, or Reese’s mini peanut butter cups on top (This messes with the Clean Eating portion of the recipe but it’s fun anyways – you can always make your own candy topping).

Note: White sugar gives you a slightly crispier cookie, while the brown sugar makes them softer and more plump.

About Jamie Webster

Just your average blogger. Married 2 years with two wonderful children who are 6 years apart. Little about me: I’m turning 31 this year (yikes), have had 9 foot surgeries in 8 years and have spent a little over 4 years of my life in and out of a wheel chair (or scooter). And today, I am training for a half marathon. I attribute two major changes in my life to my healing: the power of goal setting and going gluten free.
